Chili from Erin

I have a friend, her name is Erin. She is quite handy in the kitchen, she would never tell you so, but I will. She can bake, cook, and make it look easy. Tonight she surprised me with her own chili recipe for dinner. Not only did I love it, but our three girls all gave it a thumbs up. It’s totally worth making. The cooler days are hovering, we will be wanting warmth and comfort! The surprise of not cooking, and the family loving it made for a great night.

Also quick update. My eyes have improved a lot. I feel much better. I am ready for some vitamin D, and the weekend. Adam seems to be on the mend. Thankful to be getting ever so close to day 100.

Millet lentil chili (totally made this up…)

1 cup lentils
1 cup millet
4 cups water
chopped onion
chopped green pepper
2-3 cloves garlic
2-3 T chili powder
1/2 T cumin (could’ve used more so 1 T)
1/2 T seasoned salt
28oz can diced toms
28oz can crushed toms
28oz can black beans (You could add any beans you like)

Brown onion, gr pepper and garlic in oil. Add to pressure cooker (or pot) all ingredients but black beans. Cover and cook 10 mins in pressure cooker or probably about an hour in pot or until lentils and millet are soft. Add black beans and serve. Better the next day!

    thanks for the health update. I was wondering if you all were doing better. And I know day 100 is coming up! Oct. 8th???? Did I count correctly? Prayed for you this morning! Love you so much. Dates…..we need dates for the girls night out!
